Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the Chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to about 1/2 inch thick for even cooking.
  3. Make the Breading: In a bowl, mix the almond flour, grated Parmesan, Italian seasoning, garlic powder, salt, and pepper. In another bowl, whisk the eggs.
  4. Coat the Chicken: Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat it thoroughly in the almond flour mixture.
  5. Bake: Place the coated chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes until golden brown and cooked through.
  6. Add Sauce and Cheese: Remove the chicken from the oven, spoon marinara sauce over each piece, and sprinkle with shredded mozzarella cheese. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Serve: Garnish with fresh basil if desired and serve immediately.
