Ingredients

  • 2 cups masa harina
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable shortening
  • 1 1/4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 cup red chile sauce (store-bought or homemade)
  • Corn husks, soaked in warm water for 30 minutes

Instructions

  1. Prepare the Masa: In a large bowl, mix masa harina, baking powder, and salt. In another bowl, beat the vegetable shortening until fluffy. Gradually add the masa mixture and chicken broth, mixing until a soft dough forms.
  2. Make the Filling: Heat olive oil in a skillet over medium heat. Add shredded chicken, cumin, chili powder, and garlic powder. Stir to combine and cook for 5 minutes, allowing the flavors to meld.
  3. Assemble the Tamales: Take a soaked corn husk and spread about 2 tablespoons of masa dough on it. Place 1-2 tablespoons of chicken filling in the center and fold the sides over the filling, then fold the bottom up. Repeat until all dough and filling are used.
  4. Steam the Tamales: Place the assembled tamales upright in a large steamer pot. Cover and steam for about 1 to 1.5 hours, or until the masa pulls away easily from the husk.
  5. Serve: Once cooked, serve the tamales warm, topped with red chile sauce and your choice of toppings like sour cream or avocado.
